Bacon Cheddar Chive Mashed Potatoes
Mashed Potatoes Like you never had before. A potato with a wonderful flavor of cheese and chives to compliment any meal.
Preparation time: 20 minutes Cooking time: 20 minutes Serves: 2
Simmer 2 pounds small potatoes in salted water until they are tender (about 20 minutes). Drain. Cool slightly, then peel the potatoes.
Heat 1 cup milk with 1/2 stick butter until the butter is soft. Mash the potatoes with the hot milk and stir in 1 cup shredded cheddar. Add salt to taste. Top with ½ cup cheddar cheese, crumbled bacon and chopped green onions.
