This great recipe is for homemade fruit rolls. They are a tasty dried fruit product that your kids will love.
Chop the fruit, put into a large sauce pan and add ½ cup of water. Bring to a simmer, cover and let cook on low heat for about 10 -15 minutes or until fruit is cooked through.
Puree fruit in a blender or food processer until very smooth. Taste and add sugar if necessary.
Add the sugar in small amounts, 1 Tbsp. at a time to desired level of sweetness. Add lemon juice to help brighten the flavor of the fruit.
Pour back into pan and cook, stirring often until the mixture reduces and thickens. This should be about 30 minutes
Preheat your oven to 200 degrees. Either line a rimmed baking sheet with parchment paper or brush with vegetable oil or spray with a non-stick spray. Pour the puree onto your baking sheet making sure it is spread evenly and about 1/8 to ¼ inch thick. Put into oven and cook for 3 hours.
Fruit should be tacky but not very sticky. If the fruit is still very sticky, cook for additional time checking every ½ hour until done. Remove from oven, cool completely and turn out onto a sheet of waxed paper. Using kitchen shears, cut the fruit leather into strips along with the wax paper. Roll up the strips and store in plastic baggies or an airtight container.
