Peanut Butter Balls
Great as a snack, this will satisfy any peanut butter lover. Creamy and delicious.
Stir together powdered sugar, peanut butter and butter until well mixed.
Shape peanut butter mixture into 1 inch balls, placing them on a baking sheet covered with waxed paper.
The mixture should roll easily into balls without sticking to your hands. If it is too sticky then add 2 tbsp. powdered sugar and 1 tbsp. peanut butter until it is more firm.
Put balls in fridge for 20 minutes until dry.
Meanwhile, melt the dipping chocolate or confectioners' coating. Add the Tbsp. of shortening to the chocolate and mix. (this will give it some shine)
Drop balls one at a time in melted chocolate.
Using a fork (or toothpicks), remove from the chocolate and hold over the pan for a few seconds to let the excess chocolate drip off.
Place back on the waxed paper.
Put in fridge for about 10 minutes or just long enough for chocolate to set a little bit.
Melt the white chocolate. Cool slightly and put into a piping bag or a sturdy plastic freezer baggie. (If using the freezer bag, seal it shut and then cut off a small tip of one corner.)
Drizzle the white chocolate over the peanut butter balls.
Refrigerate until dry.
Store tightly covered in a cool dry place.
