Pistachio Crusted Salmon

Here’s to a healthy and delicious start! Salmon is a great source of lean protein while Pistachios also contain a wealth of vitamins and minerals.

    Preheat the oven to 4oo degrees Farenheit
    Whisk together the maple syrup, dijon mustard, and 1 tbsp of the orange juice. Spread or brush it all over the top of the salmon.

    Using a food processor, finely chop the pistachios. In a small bowl, mix the pistachios, 2 tsp of orange zest and the rosemary. Spread the pistachio mixture over the salmon, pressing down gently where needed to help it stay in place.
    Bake for 12 – 14 minutes until the salmon is flaky.
