Pretty Rainbow Cupcakes (Cream Cheese frosting)
Fun idea to spend the day with the kids. Great moist cake, but get your bowls ready. Great for a birthday.
Make cake mix according to directions on box.
Divide batter up into the 6 zip lock baggies. I suggest freezer bags because they are stronger (which is definitely a plus when the kids are helping). Squirt several drops of food coloring into each cake filled baggie until you have the 6 colors of the rainbow.
Seal bag tightly and mix and mash until the batter is colored evenly. You may have to add more food coloring to get the shade you want. I recommend the gel food coloring because I’ve found it has the most vibrant shades.
Cut the tip off a corner of one of your bags of cake mix and drizzle about 2 teaspoons of batter into each cupcake wrapper. Layer the colors one color at a time being careful not to stir them together. Don’t worry about covering the entire surface in one color; as long as you add the colors in ‘rainbow order’ they will look great.
Bake at 350 degrees for 18 -22 minutes until done. Cool completely, then frost.
Combine the cream cheese, butter and vanilla in a large bowl and mix. Add the sugar a little at a time, beating on low speed until creamy.
