Roasted Yam and Maple Muffins
Create a healthy muffin for your kiddos, to bring at school, with which they couldn’t turn down! Nutritious and tasty! Enjoy!
Poke a few holes in the yams with a fork and bake in the oven for about 45 minutes until cooked through and tender. Set aside and allow to cool. Once the yams are cool enough to handle, remove their skins and thoroughly mash them. Set aside. These can be made ahead and placed in the fridge until you are ready to use them.
Increase the oven temperature to 400 degrees Farenheit.
In a large bowl, mix together the flour, baking powder, baking soda, salt, cinnamon and flax meal. Stir until well combined.
In a separate bowl, beat the egg until frothy. Stir in the maple syrup, apple sauce, milk, vanilla and mashed yams. Pour the egg mixture into the flour mixture and stir until just combined. Spoon the mixture into greased muffin cups until about 2/3 full.
To prepare the struesel topping, melt the butter and mix together with the rolled oats, brown sugar and cinnamon. Spoon about 1 tsp of the struesel onto each muffin. Bake for 15 – 20 minutes. Wait 5 minutes before removing the muffins from the pan.
