Seared Tuna Salad with Avocado Dressing
Top peppery arugula with fresh tuna for a delicious summery salad. Enjoy!

Tuna, Watermelon & Arugula Salad
Pre-heat a small pan on the stove over very high heat. (The pan must be very hot to prevent sticking)
Season both sides of the tuna with salt and pepper
Add 1 teaspoon olive oil to the pan and heat for about 30 seconds. When the oil is steaming, it’s at the correct temperature
Using tongs, place the tuna in the pan and sear each side for about 30 seconds
When all sides are browned, remove from heat and place on a plate or cutting board.
Once the tuna has cooled, refrigerate until serving time
In a medium bowl, toss watermelon, arugula and green onion with lemon juice, olive oil, salt and pepper. Refrigerate until serving time
Combine the ingredients in a blender and process at medium speed for about 60-90 seconds, or until desired consistency is reached
Add salt and pepper to taste, then refrigerate until serving time
