Whip up this hearty, healthy soup that is just right for an easy dinner on a cold night. Enjoy!

Ingredients

    Preparation

    In a large pot, heat olive oil over medium high heat until it shimmers

    Add the onion and cook, stirring occasionally until it begins to brown, 3 to 5 minutes

    Add the broth, ham hock, split peas, celery, carrot and seasoning. If the hock is not covered in liquid, add enough water to cover it

    Bring to a boil; skim off any film from the surface. Reduce heat to medium low and simmer until the split peas are very tender, 1 to 1 1/2 hours

    Remove the ham hock and reserve. Using an immersion or stand blender, puree the soup
    Remove meat from hock and chop into small pieces. Stir the ham into the soup or use it as garnish
